This step is important if you want your dough to have a fine texture. Giving a test rest gives the gluten a chance to relax. This in turn prevents the texture of the dough from getting spooky or tough when the dough is baked. Providing dough residue also makes it easier to roll out, and it will hold its shape better after you give up. This is important for pita bread and for pizza dough.

It is sold in round or rectangular shapes and is made from white or whole grain flour. If you can't find cooked lavash at your favorite market, lavash and naan are good substitutes, although they have a softer, more pillowy texture than lavash.

Lavash roll in the oven with chicken

Obviously, you can use any toppings you want - we're going to next time! We also use pita bread for dipping in soup, as a side to dishes, as an accompaniment - now it is a staple of our menu. The pan is greased with oil, finely chopped onion is put into it, sautéed until it acquires a beautiful golden hue. After that, pour the minced meat, fry it well. When ready, the mass is salted and flavored with pepper and spices. Sheets of dough are laid out on the table, greased with sour cream, a thin layer of fried minced meat is placed. The cheese is rubbed on a coarse grater, and then spread on the meat filling. The liquid is drained from the olives, they are slightly dried and cut into not too thin slices. You can take a couple more if you want. pickles and cut them in the same way. The resulting components are also laid out on a sheet of pita bread.

If you have other creations and ideas for what to do with pita bread, we are all ears. Our fondness for cheese perhaps comes from our childhood days of drinking sweetened tea with cubed sugar and stuffing bread slices with feta cheese. Our love affair with cheese these days is the power behind us, making feta cheese and baking bread only to consume it fresh. Bread for Persians is fresh bread, warm and inviting, taken home from the local tomorrow morning for breakfast or afternoon for dinner.

On long summer days, fresh bread with cheese and herbs, or sliced tomato and cucumber, was a refreshing afternoon tea, just as crackers and cheese are a simple, soothing snack. The word for bread in Farsi is nan and does not refer to the Indian naan. Persian lavash is thin big leaf bread cooked inside the tanur. Tanur, similar to the Indian tandoor, is a massive earthenware pot or custom built into a well or wall and it is heated with charcoal or wood. Tanur takes a long time to heat up the clay walls.

Now you need to form a roll from the cake with the filling, pull it tight. Top treats should be greased with a mixture of one yolk and 50 gr. finely grated cheese. The workpiece is laid out on a baking sheet, sent to bake in an oven preheated to 180 degrees. In half an hour, a hearty and fragrant delicacy for the whole family will be ready.

Enjoy your meal!

After the dough rolls out, it is placed on a long thick mixer and the dough is pressed firmly against the wall of the tanur. The dough immediately sticks to the hot burning wall. Once the dough is cooked, it simply peels off the wall of the tanur. Without tanur at home, nothing prevents us from making lavash or barbary at home. Absolutely nothing beats the smell of fresh bread and makes pita bread easier than you think. If you have some time, try this simple recipe without fail.

Stuffing pita bread with salmon and cheese

Gradually add the rest of the water until the dough comes together and is slightly sticky.

  • Place all dry ingredients in a bowl and stir.
  • Install in a warm place if you are doing this in winter.
  • Once the dough doubles, remove the lid and hit it a few times.
Wrap up some of your best sandwich fittings in this, straight out of the oven, and get ready for some empty surprises. Try this and you will probably never come back. Place dry ingredients in the bowl of a stand mixer fitted with a spatula.

If desired, this recipe can be supplemented with boiled finely chopped eggs, chopped herbs. And if you do not like the taste of sour cream, then ordinary mayonnaise can easily replace it.

Recipe number 4. Quick mushroom pie

Apart from hearty snacks, from pita bread you can with any filling. We suggest you try to make a light and mouth-watering champignon pie. You will need:

General principles of preparation

Stir and add wet ingredients. This will be a very wet dough. Beat the dough for 4-5 minutes until it becomes smooth and elastic. Scoop the dough into an oiled bowl and cover with a cloth. Let it rise for an hour to an hour and a half until it doubles. For this you will need a pizza stone. Pull out a piece, about an eighth of the mass, and apply it to a well-baked piece of parchment.

Throw a little, turn the leaf, throw a little more. Make sure you dust the dough as you roll, making it as thin as possible. This leaf is not as good as these little Armenian ladies, but perfection is not required. You can do it, but for me this bread is perfect as it is. To bake them, slide the parchment with the bread off your counter and onto the back of the pan. Open the oven and rise with the pan, landing the far end of the pan on the far end of the stone.

Mushrooms need to be washed, cut into small cubes. Peel the carrots and grate on a medium-sized grater. Onions are also peeled and chopped. All of the above components are spread on a greased pan and fried (about 10 minutes). When the mass is ready, it needs to be slightly cooled, passed through a meat grinder to make minced meat.

Lay a sheet of pita bread in a baking dish or baking sheet. If the edges hang down a lot, then they need to be cut off. A layer of filling is placed on the cake, then the remaining pieces of dough that you tore off before. In a separate bowl, mix the egg with kefir, pour half into the filling. After that, sprinkle with grated cheese and herbs. Now, another layer of dough is placed on a layer of minced mushrooms with kefir sauce, several holes are made in it, the edges are folded, the other half of the filling is laid out, the remaining kefir-egg mixture is poured.

If you took 3 cakes, then you can lay another layer of minced mushroom - this way, the cake will turn out to be thicker and more satisfying.

When all the components are laid, the cake is sent to bake in the oven for 20 minutes at a temperature of 180–200 degrees. The finished delicacy is served on the table both hot and slightly cooled, pre-cut into portioned pieces.

Recipe number 5. Quick cheese pie

Cheese lovers will definitely appreciate the following recipe for easy and quick baking. To prepare treats you will need:

It is better not to melt the butter, but put it out of the refrigerator 30-40 minutes before the start of cooking. Yes, it will soften at room temperature.

Cheese must be grated on a coarse grater, put in a separate bowl, add milk to it and break the egg. The mass is thoroughly mixed, flavored with spices, salted, and, if desired, a little greenery and garlic passed through a press are added. Sheets are formed from pita bread, the dimensions of which correspond to the baking dish. They are placed on the bottom of the baking sheet, smeared with stuffing, put another sheet on top and do the same with it. Manipulations continue until the cheese and milk mass is over. The last layer should be from the test.

Before sending the dish to the oven, the top of the pie is smeared with softened butter. The delicacy is baked for about 20 minutes at 180-200 degrees. You can serve pastries with vegetable salads or cold cuts. Enjoy your meal!

Recipe number 6. Crispy and aromatic beer snack

It is possible not only from potatoes, but also from thin cakes of dough. The egg will give the appetizer a beautiful ruddy hue, and the mixture of spices will make it fragrant and incredibly tasty. For chips you will need:

Cheese should be grated as finely as possible. Break an egg into a bowl, add paprika, salt, pepper, garlic passed through a press, mix everything well. The finished mass is generously coated with sheets of dough on both sides, sprinkled with grated cheese. Now the cake should be divided into small pieces of arbitrary shape - you can cut it into squares, form straws. The chips are carefully laid out on a baking sheet lined with parchment.

The appetizer will be ready in 7-10 minutes of baking in the oven at 180-200 degrees. Serve to the table in a slightly cooled form.

Cooking time for chips is calculated individually. It is better to carefully monitor the dish during cooking, as you can miss the moment, the delicacy will burn and be spoiled.

The use of Armenian lavash in cooking is almost always due to the desire to get a quick result and at the same time create an imitation of a complex time-consuming composition. The tedious preparation of the dough often discourages busy housewives from any desire to diversify the table.

In such cases, thin pita bread turns out to be just a godsend, because it has undeniable advantage– it is suitable for any filling and at the same time, it can be baked, browned on the grill and, of course, fried in a pan.
