  • If after purchasing the squid will not be cooked immediately, but the next day, it should be stored in the freezer. No need to defrost.


How to prepare seafood?

Housewives use various tricks to easily clean squid and prepare them perfectly for frying rings. For example, frozen carcasses are poured with boiling water, causing the film to instantly shrink. Then it is easy to simply rinse off under running water. Some people prefer to remove the film in a different way. To do this, place the frozen squid under cold water, pry the film off in one place with the tip of a sharp knife, and then easily remove it entirely. If it is torn in some place, you can easily pick it up with your fingernail and continue the procedure.

The squid insides are also easy to remove. The main thing is not to forget to remove the transparent spine. You just need to pull it by the tip, it can be easily pulled out entirely.

If you need to pre-boil the squid, it is worth remembering that this process lasts literally a few minutes (from three to five). Otherwise, the meat will become “rubbery”, which will negate all efforts to prepare the dish.

  • First of all, the squid is defrosted, cleaned of film and entrails, and washed well under running water.
  • Prepared carcasses are cut into rings. They should not be too thin (at least 0.5 cm).
  • Breadcrumbs can be easily made at home. To do this, white bread is cut into pieces and crushed in a blender. Then the resulting crumbs are placed on a heated baking sheet, salt and spices are added and browned, making sure that the crumbs do not burn.
  • Beat eggs in a separate container. Then the rings are placed there.
  • After this, they are rolled in breadcrumbs.
  • Meanwhile, on the stove, heat the oil well in the pan where the squid will be submerged.
  • It is enough to fry each ring for three minutes.



  • A very important nuance is that the oil is fresh. The taste and quality of the finished dish directly depends on this.
  • After frying, the rings are placed on napkins to remove excess oil.
  • The finished rings can be decorated with parsley, dill, basil, and lemon. Crispy and airy squid rings go well with fresh vegetables - cucumbers, tomatoes, bell peppers.
  • Some housewives believe that the dish turns out tastier, and the crust becomes crispier and golden brown, if you slightly change the algorithm of actions. They recommend dipping the rings first in cornstarch, then in the egg mixture, and then in breadcrumbs. After this, they need to be placed in a container with boiling oil.
  • Many people serve the rings with a variety of sauce options. You can use any ingredients that your imagination suggests. Most often, mayonnaise, soy product, lemon juice, and various spices are used to prepare the sauce.

How to cook squid simple and fast? Fry it in rings in breadcrumbs. This would be a great hot snack or even a light dinner. You can serve with green salad leaves or any vegetable salad.

If you bought frozen squid, defrost it “without temperature shock”, that is, transfer it from the freezer to the refrigerator overnight, the next day, if necessary, let it stand for another hour at room temperature - and you can cook. We will need peeled squid rings (you can buy frozen rings right away - this is the easiest way for this dish). If you bought the squid carcass, then after defrosting, pour boiling water over the carcass for a couple of minutes (no more!) - the film will curl up and “move away” from the meat, after which you can easily remove it under cold running water. After this, remove the chord (something similar to the spine) and cut the squid into rings about 1 centimeter wide. Next, let's start cooking.

Need to:

  • Squid rings – 0.5 kilograms
  • Lemon – quarter of 1 lemon (more precisely, we will need lemon juice from a quarter of a lemon)
  • Soy sauce – 1 tablespoon (can be replaced with 0.5 teaspoon table salt)
  • Seafood seasoning (ready-made spices) – 0.5-1 teaspoon
  • Chicken eggs – 3 pieces
  • Wheat flour – 3 heaped tablespoons
  • Breadcrumbs (white, from premium bread crumbs) – 4 heaped tablespoons
  • Vegetable oil - approximately 0.5 to 1 cup (depending on the diameter of your frying pan)

Preparation:

Rinse the squid rings (thawed and peeled) with cold running water, place in a colander and let the water drain.

Place the squid rings in a bowl or ladle, pour in boiling water (literally for 5-7 seconds, you only have time to lightly mix the rings) and immediately drain the boiling water, throwing the rings into a colander. This procedure is necessary so that the squid rings “keep their shape” and do not flatten.

Next we need to lightly “marinate” the rings. Squeeze the juice of a quarter of a lemon on them, pour soy sauce (or just salt), sprinkle with spices (seafood seasoning), and stir.

Leave the squid rings marinated in this way to stand for 20-30 minutes.

Take three small bowls or just deep plates. In one of them, beat the eggs, mixing the whites and yolks, just with a fork, there is no need to beat too much. Place flour in another bowl and breadcrumbs in a third.

We put all this closer to the stove. Pour vegetable oil into a deep frying pan (we have already written about the required amount in the recipe for squid rings in batter, you can see this) and let the oil get very hot.

First roll the squid rings (one at a time) in flour, then dip in beaten eggs and roll in breadcrumbs - and place in a frying pan ( watch our video recipe!). We do this as quickly as possible. We do not lay the rings close together, but at some distance from each other. Fry the rings on medium-high heat, first on one side until golden brown, 1.5-2 minutes, no more!

Then we turn the squid rings over and fry them on the other side, also until golden brown and for about the same amount of time (perhaps a little less). Keep track of the time! If you overcook the squid, it will be rubbery, tough and tasteless.

Despite the fact that squid dishes have been prepared for several centuries, this seafood product is not particularly in demand in Russia. In Korea, China, Japan and other coastal countries, squid carcasses are very popular, and almost everything is eaten, even ink (they make sauce from it).

  • eggs – 3 pcs.
  • flour – 5 tbsp. spoons
  • ground crackers – 8 – 10 tbsp. spoons
  • salt - half a teaspoon
  • odorless vegetable oil – 500 ml.

Deep frying squid rings


  1. Thaw the squid completely.
  2. Pour boiling water over it, drain the water and immediately add a new portion of hot water. Leave for no longer than two minutes, after which the carcasses are cleaned of the remnants of the top film and the inner plate is removed.

  3. Cut the prepared seafood into rings as thick as your little finger.

  4. Break the eggs into a deep bowl and beat with a whisk. It will be ice cream.

  5. Pour flour and crackers into separate plates (salt is added to the flour and mixed). Heat the oil well for deep frying. Roll each squid ring in flour.

  6. Then lower it into the ice cream.

  7. Make the breadcrumb coating as best as possible. By the way, I don’t buy breadcrumbs, I make them myself. Here's a simple one.

  8. Fry in a frying pan for about 4-6 minutes, that is, one side of the ring will take 2-3 minutes.
  9. After frying, place the rings on a paper napkin to “remove” excess oil.
  10. To serve the dish, I highly recommend preparing some kind of sauce. The simplest is a mixture of sour cream, mayonnaise, dill and grated clove of garlic. You can also cut the lime into thin slices for the squid or add a few drops of citrus to the mayonnaise.
  11. For a large company, you can fry squid rings using a different recipe. The composition for the batter is as follows:
    • 500 g flour
    • 2 eggs
    • 500 ml light light beer
    • 1 teaspoon salt.

    The consistency of the batter should resemble sour cream, and the quantity will be enough for a whole kilogram of rings.

Crispy fried squid rings breaded in breadcrumbs are surprisingly tasty and always go down with a bang at any feast. But squid seems to be simple to prepare, like the tongue in a recipe, but it still has some tricks.

If you prepare the clam incorrectly or overcook it on the fire, you won’t get a pleasant meal. You will chew rubber without any pleasure!

Now let's start breading. In one plate we will have flour, in another - beaten eggs, the so-called lezon, and in the third -. Add a pinch of salt to the flour, eggs and breadcrumbs. The squid rings need to be rolled in flour, then dipped in the egg. In appearance, they will look like they are in batter, and the next step is in breadcrumbs. After this, they need to be laid out on a flat dish in one layer and put in the refrigerator for half an hour so that the breading dries and does not fall off the rings during frying.

In order not to waste time, quickly peel the onion and rinse it under cool water. Then it must be cut, but not along, but across, to make rings. They must be carefully pulled apart into separate rings. Let's put them aside for now.

We will fry the breaded squid rings in a well-heated frying pan in a large amount of oil.

After frying, place the resulting rings on a paper towel to remove excess oil and transfer to a plate. Next, in a frying pan with the remaining oil, you need to place the onion rings. It is necessary to quickly fry it until the onion acquires a beautiful, golden color.
