How to make pancakes with kefir:

1. The dough is prepared very simply and quickly. Beat the eggs into a deep bowl, add sugar, salt, vanilla sugar and stir with a whisk.

2.Pour in kefir and stir again.

3.Pour in vegetable oil, stir.

4. Sift the flour into a separate bowl and combine it with a teaspoon of soda. Stir these dry ingredients. When soda is added to flour, it is not immediately quenched by kefir and the pancakes turn out more fluffy and do not float. If you immediately quench the soda in kefir, then there will not be enough “power” to raise the pancakes.

5.Add flour mixed with soda to the dough. Use a whisk to mix everything well so that there are no lumps left. Instead of using a hand whisk, you can use a blender attachment.

6. The finished dough has a consistency like thick sour cream; it flows from the whisk in a wide ribbon.

7. You must take a frying pan with a non-stick coating, because it will not be greased. Heat the pan quite high. The dough will stick to the cold surface and the pancake will be ruined. You'll have to wash the pan and start all over again. The dough is poured with a ladle into the middle of the pan. To ensure it is evenly distributed, you can shake the pan a little. There is no need to spread the dough over the surface. Make the heat medium or even slightly less than medium.

8.When a lot of bursting bubbles begin to appear on the surface, you can turn the pancake over.

9.You need to fry all the pancakes this way. They rise well.

If the frying pan has a thick bottom, the pancakes will be well baked inside. If you take it with a thin bottom, then the bottom will burn, and the middle will remain raw.

10.Classic pancakes served with maple syrup. In our country, it is more common to eat them with honey, jam or other syrup to taste.

Pancakes, like fluff, on warm kefir without eggs

This recipe makes very tasty pancakes. They are fluffy, soft and do not fall off after baking. Try making kefir pancakes this way and you will be pleasantly surprised.

Ingredients:

  • kefir - 0.5 l
  • sugar - 20 gr.
  • flour - 270 gr.
  • soda - 8 gr.
  • salt - a pinch
  • boiling water - 1 tsp.

How to cook fluffy pancakes with kefir.

1.Pour kefir into a bowl and microwave it for 1.5 minutes at 600 W. The kefir will become quite warm. It is from warm kefir that you will get fluffy pancakes.

2.Pour sugar, salt and sifted flour into heated kefir.

3. Stir with a whisk until the dough is smooth and homogeneous. The consistency should be like thick sour cream.

4.Pour baking soda into a small bowl and pour in a small amount of boiling water. The water should just cover the baking soda. Pour the baking soda and water into the dough and mix everything slowly.

5. Now the dough is ready, you can’t mix it any more, otherwise the fluffiness will disappear.

6. Start frying. Pour sunflower oil into the pan until it covers the bottom, no more is needed. Heat the oil well. When the baking soda gets into the dough, it will begin to create bubbles. It is important not to burst these bubbles by stirring. Using a spoon, carefully scoop up the dough and drop it into the pan. For convenience, you can work with two spoons - scoop up the dough with one, and help transfer it into the frying pan with the other.

7.Fry the pancakes over medium heat for about 3 minutes on one side until golden brown. Then turn it over. Place the finished baked goods on a paper towel to absorb excess fat.

8. Since there is little sugar in the dough, these pancakes are served with jam or honey. They are crispy on the outside and soft and light on the inside. Delicious. After cooling, these pancakes will not fall, but will remain fluffy.

Oatmeal pancakes like grandma's

If you replace some of the flour with crushed oatmeal, you will get not only tasty baked goods, but also healthy ones. Of course, if you wish, you can make pancakes only from flour. Then they will be denser and taller. But you will still get more benefits with oatmeal. The flakes must first be ground in a blender. Or use ready-made oatmeal. You can also use buckwheat flour.

Ingredients:

  • kefir - 0.5 l
  • eggs - 2 pcs.
  • salt - 1/3 tsp.
  • sugar - 2 tbsp. with a slide
  • vanillin - on the tip of a knife
  • vegetable oil - 2 tbsp.
  • soda - 1 tsp.
  • oatmeal or flour - 1 tbsp.
  • flour - 2 tbsp.

Products should be at room temperature.

Preparation:

1. Sift two cups of flour into a separate bowl. Grind the oatmeal and add to the flour. Also add baking soda. Stir these dry ingredients.

2. Beat the eggs into another bowl and stir them a little with a whisk. Add sugar and salt, stir again. Pour kefir and add vanillin. Stir until the sugar dissolves.

3.Pour vegetable oil into the resulting mixture.

4. All that remains is to knead the dough. Add the mixture of flour and soda in two stages and stir. The dough should be smooth, without lumps, and thick.

5. You need to fry these pancakes as usual in hot oil. The dough with the addition of oatmeal will be less viscous, in contrast to the dough with only wheat flour. Spoon the dough into the pan and bake until browned on both sides.

If you want even more fluffy pancakes, add 2-3 tbsp. flour.

8. The finished pancakes are porous inside, airy and fluffy. Very tasty, satisfying and healthy.

You can add small pieces of fruit or berries to these pancakes. For example, grate an apple (you can cut it into pieces) or add banana puree. It will be even healthier and tastier. This dough is a base that you can experiment with.

Lush pancakes on kefir with semolina

As you know, flour in baking can be partially replaced with semolina. This recipe also uses it. The pancakes also turn out fluffy and tender.

Ingredients:

  • kefir 2.5% – 500 ml
  • semolina - 4 tbsp.
  • sugar - 4 tbsp.
  • salt - 0.5 tsp.
  • soda - 1 tsp.
  • eggs - 2 pcs.
  • flour - 14-19 tbsp. (you need to look at the consistency)
  • vanillin - on the tip of a knife

Preparation:

1.Pour room temperature kefir into a bowl. Add sugar, salt and soda. Stir.

2.Beat two eggs and add vanillin. Stir again.

3.Add 4 tablespoons of semolina and stir.

4. All that remains is to add flour. Sift the flour in parts and stir with kefir. The amount of flour may be different for everyone. The main thing is the thick consistency of the dough. The dough should not spread across the pan like pancakes.

5. Leave the finished dough for 15 minutes so that the semolina swells.

6.Fry the pancakes according to the classics: over low heat in heated oil until golden brown. To ensure that these pancakes are baked better in the middle, fry them covered.

7. That's all. The pancakes turn out quite sweet, so they are best eaten with sour cream. If you serve them with jam, it is better to reduce the amount of sugar in the dough. As you can see in the photo, these pancakes turn out very fluffy, porous and soft.
