Hello dear readers. Have you ever had a situation where you made a lot of mashed potatoes? We recently had friends come over for dinner. And we made a lot of mashed potatoes. And then I remembered how I tried potato zrazy with fried minced meat and cabbage at my grandmother’s. And a couple of years ago, after watching Yulia Vysotskaya’s program, I was preparing potato zrazy with salmon. Otherwise, the puree remains like this, so don’t eat it for several days; you can make so many different delicious dishes from the puree.

Today I want to tell you how to prepare potato zrazy, I have a recipe with step-by-step photos. Today zrazy without filling. But I plan to prepare different fillings and show everything with photos.

In our family we never cooked zrazy, but my grandmother sometimes did, not from leftover mashed potatoes, but cooked mashed potatoes specifically for this purpose. She said that preparing this dish is simple, potatoes, flour, egg and filling.

Potato zrazy is a very tasty and satisfying dish. It is very easy to prepare, especially if you have mashed potatoes prepared in advance. It often happens that for a holiday or birthday, you prepare a lot of puree and it remains. But it doesn’t matter, there are so many options for different and very tasty potato dishes. For example, potato casserole with minced meat, zrazy made from mashed potatoes.

How to make potato zrazy from mashed potatoes

  • 500 grams of mashed potatoes
  • 1 egg
  • 1-2 tbsp. spoons of flour
  • salt. pepper to taste
  • vegetable oil

I have a lot of mashed potatoes left, so I’ve already made them several times. What I would like to note is that the children liked the zrazy, especially with sour cream. My son even called zrazy potato pies. You must add milk and butter to mashed potatoes, then the zrazy will turn out very tasty.

If the potatoes are from the refrigerator, then they need to be slightly warmed or left on the table so that they come to room temperature, making it easier to form zrazy.

  1. Place mashed potatoes in a bowl. Add egg, flour, salt and pepper to taste. My eggs are rustic. You can add greens, but this is optional. Mix everything thoroughly.
  2. If you just cooked the puree, let it cool. And then start cooking right away.
  3. When everything is thoroughly mixed, we begin to form zrazy. They can be in the form of cutlets, pies or round shapes. Do as you please.
  4. The finished zrazy should be rolled in flour on both sides. If you are making zrazy with filling, then take part of the potato, put a teaspoon of filling in the middle and cover the flatbread with mashed potatoes, forming a pie.
  5. Make zrazy out of all the potatoes, placing them already prepared, sprinkled with flour, on a plate or board. Then it will be very convenient to fry the zrazy.
  6. Meanwhile, put a frying pan on the fire and pour vegetable oil into it. Place zrazy on a heated frying pan.
  7. Fry zrazy from mashed potatoes on both sides until golden brown. I wanted to make them in the form of pies. This is how they turned out for me.
  8. So we fry all the zrazy that you made. Zrazy can be placed on a plate previously covered with a paper towel to absorb excess vegetable oil.
  9. It turns out to be a very tasty, satisfying dish, especially with sour cream. Of course, zrazy will turn out even tastier with minced meat or cabbage. Next time we'll cook it.
  10. Zrazy can be served hot or cold. Potato zrazy goes well with vegetables or vegetable salads.

Cabbage filling

The filling can be either fresh or sauerkraut. Which one do you like better? If the cabbage is sauerkraut, then just fry it in a frying pan, squeezing it out first.

Fry cabbage with onions. We fill potato zrazy. From the remaining potatoes I made zrazy with cabbage for the children. I love it when there is a lot of filling, be it pies. dumplings or zrazy.

If you want to make zrazy from fresh cabbage, then you need to cut the cabbage, fry it, add onions, carrots and a little tomato. Fry until done.

Fish filling

I once prepared zrazy stuffed with red fish. I boiled the fish, removed the bones, chopped it, added finely chopped dill, salt and pepper. I filled zrazy with this filling. Served with sour cream. This is delicious.

Mushroom filling

If you like mushrooms, then they are quite suitable for the filling. Mushrooms need to be fried with onions until cooked in a frying pan. Champignons are usually used.

Egg filling

It's like a filling for pies with eggs and onions. Boil the eggs and chop. Finely chop the greens and add to the eggs. Salt and pepper to taste. Add a little melted butter to the filling. This way it does not crumble, but becomes more homogeneous.

You can add a little hard cheese to the filling.

They also prepare the filling for zraz from sausages, sausages or canned fish. If you use sausage or frankfurters, then they need to be chopped and combined with onions fried until golden brown.

And if you want to fill zrazy with canned fish, I recommend using canned fish in oil. The oil must be drained and the canned food must be mashed with a fork. You can add fried onions to the fish. They also add boiled rice.

In general, there are filling options for every taste. But my favorite is zrazy with cabbage. As you can see, preparing them is not at all difficult.     Place the Gnocchi on a plate, pour hot sauce over them, sprinkle with chopped parsley and dry chopped onion.

    We prepare the onions in advance: cut the onions into rings, roll them in flour and fry them in a large amount of vegetable oil (i.e. deep-frying). Then we put it on a napkin so that the fat drips off and the onions dry - and we keep it like this for a day, until it dries. Then we crush it by hand and store it in a cardboard box.

    Here's an original way to use yesterday's mashed potatoes. But if you really want Gnoki, and yesterday’s mashed potatoes, as luck would have it, were eaten, then feel free to boil the potatoes in their jackets, peel them, mash them into mashed potatoes, and then you already know what to do...     Yesterday's puree can simply be heated in a frying pan with butter, it will form a crust on the bottom, very tasty.

    Can be used as a filling for dumplings, pancakes, pies or pie, you can simply, or you can add fried mushrooms and onions.

    I suggest making potato focaccia from yesterday’s puree. In fact, everything is simple for those who know how to make yeast dough. Take about 150 g of yesterday's puree. If it is too hard, then add a little milk so that it becomes medium soft, but not liquid. Now add a couple of tablespoons of sugar and 25 g of yeast to 1/3 cup of warm water. Bring the yeast to the cap. Now add the remaining 2/3 cup of water, 1 tsp. salt, mashed potatoes and little by little add 2.5 tbsp. flour. Finish with a little olive oil. Knead the dough and let it rise 2 times. Knead again and make a flat cake with indentations, grease with olive oil, sprinkle with Provençal herbs and salt and set to bake.

    Our focaccia is ready.

    Is there much left? You can use potato balls - add eggs, a little soda, and flour to the mashed potatoes. Fry in vegetable oil. You can use puoe as a base for pancakes - just like regular pancakes, add puree to the dough. Fry like regular pancakes. You can make pies with potatoes. You can add mushroom or liver filling. You can make dumplings with potatoes. You can have fashionable gnocchi - dumplings made from potato dough.

    I also often end up making mashed potatoes with a reserve, eat the meat, and leave the potatoes.

    I use it in the following dishes:

    1. If there is dough, then I fry onions, add them to the puree and make pies.

    2. I cut thin Armenian lavash into strips, usually into 6 parts. On each one I spread a thin layer of mashed potatoes, half a sausage, sprinkle with grated cheese, roll it into a tube and place it in the microwave for a couple of minutes. It turns out delicious! If desired, the tubes can be fried in a frying pan.

    3.You can make potato casserole.

    If you don’t want to bother and sculpt something, make a potato casserole. To do this, you need to grease a frying pan without a handle with oil (for example, sunflower oil), and put in layers what you have:

    1. a layer of mashed potatoes, a layer of fried minced meat with onions, again a layer of mashed potatoes, spread sour cream or mayonnaise on top.
    2. the same thing, but replace the middle layer with canned fish.
    3. the same thing, but replace the middle layer with mushrooms fried with onions.

    In general, there is room for fantasy to unfold - and it is eaten with a bang.

    In general, yesterday’s mashed potatoes can be eaten if they have been in the refrigerator since yesterday. This is what we usually do. But if you absolutely do not eat yesterday’s food, you can always make delicious pies from the puree. You can also add pickles, fried onions or mushrooms, ham or minced meat to the filling. You can also make a casserole from mashed potatoes. But it is no longer as tasty and versatile.

    There are Indian potato cakes that are very tasty and easy to prepare. They were probably specially designed for processing leftover mashed potatoes. This is how they are done.
